Ingredients
For the Cheese Sauce
1cancream of chicken soup
½cupsour cream
1cupchicken broth
1can(4 oz.) diced mild green chilies
¼cupsalsa (red or green)
½tsppaprika
½tspcumin
¼tspgarlic powder
1½cupsshredded cheddar cheese
For the filling
2cupschopped cooked chicken
sauce, above
Additional
10small (6-8 inch) flour tortillas
1½cupshredded cheddar cheese
1avocado, sliced
½headlettuce, chopped and rinsed
olives, tomatoes, as desired
salsa, sour cream, as desired
Instructions
Make the Sauce:
In a medium bowl, combine all of the sauce ingredients.
Make the Filling:
Mix chicken with 1 cup of the sauce.
Assemble & Bake Your Enchiladas
Preheat oven to 350°.Fill each tortilla with ¼ cup filling down the center. Roll up and place seam-side down in a greased 9x13 baking dish.Pour the remaining sauce over the enchiladas.Bake the enchiladas for 30 minutes.After baking, top the enchiladas with 1½ cup cheese.Serve with avocado, lettuce, olives, tomatoes, salsa, and sour cream, as desired.
